Blackened Tomato Salsa
Ingredients:
- 6 tomatoes, 1/2" slices
- Blackening mix
- 1/2 cup purple onions, finely chopped (120 ml)
- 1/2 cup green onions, chopped (120 ml)
- 1 1/2 tbsp jalapenos, chopped with seeds (22.5 ml)
- 1/2 cup chopped cilantro (120 ml)
- 1/2 cup olive oil (120 ml)
- 1 tbsp salt
- 1/2 cup lemon juice (120 ml)
Steps:
- Coat the pieces of tomato with blackening mix and place on a hot cast iron pan.
- Drizzle with melted butter for smoky taste, flip and repeat on other side.
- Cut the blackened tomatoes into cubes.
- Combine salsa ingredients and add tomatoes.
